Sensory studies of an energy dense drink for elderly people
The average length of life is increasing in the western world, hence the older population is growing. A common health problem among the elderly is malnutrition.
Malnutrition causes decreased body strength and is associated with an amplified risk of infections, depression, fractures and increased mortality. The health
care system is therefore faced with the challenge to prevent malnutrition among the growing population of elderly. This could be done by providing nutritious
foods developed to meet the specific needs of elderly. The overall objective of this project was to test a healthy energy dense drink based on oats targeted for the elderly
consumers as a strategy to prevent malnutrition among elderly.

AimThe aim of this study was to try to understand youngsters and their attitude to alcohol in the countryside and in a large city. The questions at issue have been: How do youngsters from the countryside, who drink, and do not drink alcohol, view the school- family- and friendsituation? How do youngsters from a large city, who drink, and do not drink alcohol, view the school- family- and friendsituation? Can we understand youths? attitude to alcohol on basis of the factors: School, family and friends? Are there any differences and similarities?MethodInterviews have been implemented with four youngsters in a large city and in the countryside. To gain as much as possible from the interviews a questionnaire was distributed to two classes in year nine in the countryside, and one class in the large city. The interview material was analysed on the basis from earlier research and two theoretical models.ResultsAccording to the youngsters that drink, both in the countryside and the large city, the most common view in school was that high demands are put on the youngsters and that they should study more then they do.

The purpose of this study was to examine how young people who have chosen not to drink alcohol experience themselves and their surroundings. The aim was to find out what role temperance plays in their perceived identity. I also wanted to find out how they experienced the views of them, temperance and the temperance movement in their surroundings. In this project an iPhone application for storing food and drink experiences was developed with focus on an easy interaction design. The already existing market of similar applications were studied and evaluated to extract their positive and negative features. Interviews with experts within the food and drink business where made in the pre study to get a good perception of how to divide and categorize the sections in the application. To optimize the usability, workshops with potential users with different technical experiences where continuously held during the development of the design.During the development two variants of development environments where evaluated. The final result of the application was developed in the environment that made the best impression and seemed to be the best alternative.The resulting product has a thought out design meant to be easy to understand, even for the first time users.

Sit, Eat, Drink, Talk, Laugh ? Dining and Mixed Media, is an exploratory study of qualities in everyday life and challenges people to enjoy the qualities of mundanity. Seeking inspiration in ethnographic studies, field work was conducted in domestic settings, returning an extensive body of material to work from. The study challenges people to absorb the moment, reflect and enjoy, rather than pacing through a lifetime, with a constant focus on the future instead of the present. This work takes a starting point in food and dining as a social activity, where interactive sound and a reference to online social media is explored through two interventions.
Utveckling av en fiberberikad probiotisk fruktdryck
The purpose of this study was to investigate whether resistant maltodextrin is suitable as a fiber source in the probiotic fruit drink ProViva Mango without affecting the probiotic bacterium Lactobacillus plantarum 299v, viscosity or the sensory experience of the drink. Resistant maltodextrin is produced from hydrolyzed corn starch and is classified as a soluble dietary fiber. It is relatively resistant to digestion in the small intestine, where approximately 10% can be broken down, 50% can be fermented in the colon by the intestinal flora and 40 % is excreted in the faeces. Resistant maltodextrin has several important qualities when it comes to food processing. When added in a product, it does not affect the viscosity or taste and it is heat and acid stable.
